Flavio Paoletti worked as senior scientist at the Research Centre for Food and Nutrition of the Council for Agricultural Research and Economics – CREA (Italy). He has over 25 years of experience on the study of the nutritional and organoleptic quality of organic food. On this topic, Flavio has been responsible for coordination of national projects and participated in national and trans-national projects. He coordinated the CORE Organic Cofund project “Code of Practice for organic food processing – ProOrg” (www.proorgproject.com), whose objective was to develop a guide that can help organic food processors in implementing the European organic Regulation in the daily pratice and in the selection of processing technologies in line with the organic agriculture principles. He is member of the Steering Committee of the OFSP.
